NASTURTIUM VINEGAR

2 cups nasturtium flowers
10 black peppercorns
1 quart white distilled or white wine vinegar

Sterilize a quart jar, place clean blooms and peppercorns into the jar and pour in the vinegar. Cover jar with a non-metallic lid. Set jar in a cool, dark place (a closet is good) for about 1 week to develop. Strain out the flowers and discard. Strain this beautiful vinegar through a coffee filter into a sterilized bottle. Cork and seal. Makes 1 quart.
